This is our take on a staple Mexican comfort dish for our rooftop restaurant Tope. We use a mix of jalapeno, poblano, anaheim and serrano chilis, white hominy and cilantro all slow cooked with chicken. It's topped with shaved cabbage, radish and cilantro and comes with a choice of warm flour or corn tortillas.
